Amazingly useful guide to preparing different doughs

1. Basic Bread Dough

Ingredients • 3 cups flour • 1 tbsp sugar • 1 tbsp yeast • 1 tsp salt • 1 cup warm water • 1 tbsp oil

Instructions 1. Mix yeast, sugar, warm water; rest 5–10 minutes. 2. Add flour, salt, oil; knead 8–10 minutes. 3. Let rise until doubled (~1 hour). 4. Shape and bake at 190°C (375°F).

2. Pizza Dough

Ingredients • 2 1/2 cups flour • 1 tsp yeast • 1 tsp sugar • 1 tsp salt • 1 cup warm water • 2 tbsp olive oil

Instructions 1. Activate yeast. 2. Mix all ingredients; knead smooth. 3. Rise 1 hour. 4. Roll, top, bake hot (220°C / 425°F).

3. Pasta Dough

Ingredients • 2 cups flour • 3 eggs • 1 tbsp olive oil • 1/2 tsp salt

Instructions 1. Mix into firm dough. 2. Knead 10 minutes. 3. Rest 30 minutes. 4. Roll and cut.

4. Naan Dough

Ingredients • 2 cups flour • 1 tsp yeast • 1 tsp sugar • 1/3 cup yogurt • Warm water • Salt

Instructions 1. Mix and knead soft dough. 2. Rise 1 hour. 3. Roll and cook in hot pan.

5. Dumpling Dough

Ingredients • 2 cups flour • 3/4 cup warm water • Pinch salt

Instructions 1. Mix to smooth dough. 2. Rest 30 minutes. 3. Roll thin and cut wrappers.

6. Pie Dough

Ingredients • 2 1/2 cups flour • 1 cup cold butter • 1/4 cup ice water • 1/2 tsp salt

Instructions 1. Cut butter into flour. 2. Add water gently. 3. Chill 30 minutes. 4. Roll and bake.

7. Pastry Dough

Ingredients • 2 cups flour • 1 tbsp sugar • 1 egg yolk • 1/2 cup butter • Cold water

Instructions 1. Mix to crumbly dough. 2. Bring together lightly. 3. Chill before rolling.

8. Cookie Dough

Ingredients • 1 1/4 cups flour • 1/2 cup butter • 1/2 cup sugar • 1/2 cup brown sugar • Vanilla

Instructions 1. Cream butter and sugars. 2. Add flour and vanilla. 3. Scoop and bake 10–12 minutes.

9. Puff Dough (Quick Version)

Ingredients • 2 1/4 cups flour • 1 cup cold butter • Cold water • 1/2 tsp salt

Instructions 1. Mix roughly with butter pieces. 2. Fold and roll several times. 3. Chill between folds. 4. Use for pastries.
